Gurren Lagann is good.
If you haven't seen them yet you must[/i] watch trigun and cowboy bebop.
If you like action you might try black lagoon.
For a typical shonen series Soul Eater has been pretty good so far.
If you like shonen and haven't seen it yet Bleach is good once you get past the first part of the seires (but the beginning part is pretty typical/boring).
Samurai Champloo if you haven't seen that.

Gurren Lagen for sure, Panty & Stocking (if you've been living under a rock and never heard of it), Shugo Chara, *looks around room*, umm I'll post more once I go through my dvds.
