I'm already working up a layout for the Dealer's Room for next year. At this point, I can't say much about how many tables there will be, but there should be more than last year.
And I will say that Cat is right. Don't tick off the Dealer's has been one of my main philosophies. Thankfully I got along with all our dealers this year and got to see them again up at Acen.

Most conventions have blocks of space set up and let the dealers choose their places on a first come first served basis.
Also, what the dealers choose to sell is their choice and to limit them to something like 'you can't sell your snack/food products' is really limiting to the dealers and sometimes off-putting to them too. For instance, the "Pocky Lady" from Sakura Con many years ago sold various japanese dishes and chopstick rests and keychains as well as a large variety of regular and gourmet pocky and various instant ramen and things like that. If you were to limit her to 'well you can't sell food/snacks' then that would seriously limit her potential revenue.
